Esta sopa fría de pimientos es ideal para el verano cuando no apetece tanto un plato de sopa caliente, como acompañamiento a cualquier comida y para simular un gazpacho o salmorejo.

INGREDIENTES
- 1 cebolla mediana picada
- 2 dientes de ajo
- 1 zanahoria picada
- 3 tazas de caldo de verdura
- 5 pimientos rojos
- 1 hoja de laurel
- 1 cucharada de aceite de oliva
- Guindilla (opcional)
PREPARACION
Tardaremos un poco más que para elaborar un gazpacho habitual ya que debemos cocer los pimientos un buen rato y posteriormente dejar en el frigorífico si es posible el día antes a ser consumida. En una olla grande calentamos 1 cucharada de aceite de oliva, cuando esté caliente añadimos la cebolla y la cocinamos hasta que quede «transparente», ponemos los ajos y zanahoria y removemos unos minutos.
Añadimos a la olla el caldo de verdura, los pimientos, la hoja de laurel y la guindilla si quieres. Tapamos y dejamos hervir a fuego lento durante 30 minutos, retiramos la hoja de laurel y lo dejamos enfriar.
Licuamos la mezcla hasta que quede homogéneo y colocamos en un recipiente para enfriar por completo.
PRESENTACION FINAL
Puedes servir esta sopa fría de pimientos en tazas, con un poco de queso fresco batido desnatado que rebajará el picor de la guindilla si has puesto demasiada, además de darle un toque especial.
